Análisis de digitalización de procesos en microempresas de servicios gastronómicos por COVID-19 en Guayaquil, Ecuador.

Abstract

The objective of this research project is to analyze the digitalization of processes of micro-enterprises in the gastronomic services sector by COVID-19 in the city of Guayaquil. For this analysis, the inductive method was used since it starts from a specific situation to reach general conclusions, studying a descriptive case related to the gastronomic sector. The position of the research is epistemological, with a socio-critical paradigmatic characteristic, because it builds knowledge according to perspectives of events that have already happened in time; in this case observing the processes of the micro-enterprises of the gastronomic services sector that before the COVID-19 pandemic, were carried out through traditional physical methods. In addition, a qualitative approach was used since the main research instrument and primary source of information is the interview, where the results obtained make it possible to know the situation that the micro-enterprises of the gastronomic sector went through and how they implemented digitalization for the survival of their business; as a secondary source of information, bibliographic analysis and data were used. Finally, an analysis was made in which the different processes taken from a physical to a digital medium that different businesses dedicated to the commercialization of gastronomic services implemented are known, and if these have had a positive or negative impact on the different areas of work.
