Descripción :	The next thesis is a feasibility study for the opening of a gourmet - vegetarian restaurant in Guayaquil. Due to the growth of healthy and nutritional eating this situation is taken like a business opportunity to make vegetarian food more know and likeable for people, adding of course the gourmet factor. This investigation had the objective of analyzing the needs and feasibility for the res-taurant. It based the study on the results taken from surveys and interviews made in Guayaquil, these results allowed to measure how positive it would be the restaurant under study, as its financial feasibility as well. Is taken under consideration the fact of putting this business in practice, is a good business idea to motivate entrepreneurs that own vegetarian restaurants to make a market research and a profound promotion of this type of food so more people would actually visit it. La presente tesis es un estudio de factibilidad para implementar un restaurante vegetariano-gourmet en la ciudad de Guayaquil. Debido al crecimiento de la alimentación nutricional y saludable se estima este acontecimiento como una oportunidad de negocio para difundir el vegetarianismo agregándole el factor gourmet. Esta investigación bajos su objetivos principales de analizar necesidades y rentabilidad del funcionamiento del restaurante, basó sus estudios de acuerdo a encuestas y entrevistas realizadas dentro de la ciudad. Sus resultados permitieron medir una acogida positiva al restaurante en estudio y adicionalmente un estudio financiero rentable. Se considera factible la implementación del negocio y se motiva dueños de establecimien tos vegetarianos a implementar estudios de mercados profundos y promoción para difundir con más auge los locales de comida vegetariana en la ciudad de Guayaquil.
