Description:	This project aims at implementing a cafe restaurant that falls within the new trends in world tourism such as sustainable tourism and gastronomic tourism. The document has been divided into two parts: the first part contains the theoretical elements supporting the research. The second part contains the Business Plan and Financial Analysis. The Business Plan is the core of the project as it contains the description of the proposed tourism project: sustainable Restaurant "El Huerto" located in the premises of Guayaquil Historical Park. We have chosen this location considering that it is a place already positioned in the tourism environment and has natural and architectural elements that strengthen the concept of the restaurant. The Marketing plan is included as part of the Business Plan. This plan analyzes the business opportunity and brand management among other important issues. The Marketing plan was prepared upon making the PEST and SWOT analysis Tables containing calculations to determine the initial investment to implement the project, its financing, business projections and profitability analysis of the project are presented as part of the Financial Analysis. El presente proyecto tiene como finalidad la implementación de un restaurante-cafetería que se enmarque en las nuevas tendencias del turismo a nivel mundial como son el turismo sustentable y el turismo gastronómico. Hemos estructurado el documento en dos partes: la primera contiene los elementos teóricos que fundamentan la investigación. La segunda parte contiene el Plan de Negocios y el Análisis Financiero. El Plan de Negocios es la parte medular del proyecto ya que contiene la descripción del proyecto turístico que se propone: Restaurante Sostenible “El Huerto” ubicado en las instalaciones del Parque Histórico de Guayaquil. Se ha escogido este lugar para su ubicación considerando que es un lugar que está posicionado turísticamente, que tiene elementos naturales y arquitectónicos que refuerzan el concepto del restaurante. Como parte del Plan de Negocios se incluye el Plan de Marketing que analiza desde la oportunidad del negocio hasta el manejo de marca. Para la elaboración del Plan de Marketing se realizaron el análisis PEST y el análisis FODA. El Análisis Financiero se presenta a través de cuadros que contienen los cálculos realizados para determinar la inversión inicial que significaría implementar el proyecto, su financiamiento, las proyecciones del negocio y el análisis de rentabilidad del proyecto.
